Spicy Roast Chicken


For chicken

  • 1/4 cup mustard
  • 1/2 tablespoon water
  • 1 tbsp. fresh lemon juice
  • half tablespoon ancho chile powder
  • 2 tbsp. olive oil
  • 4 garlic cloves, minced
  • Salt and freshly ground black pepper
  • One 4-pound pastured chicken
  • 2 tbsp. pickled peppers, sliced
  • 1/4 cup of the brine strained into a spray bottle
  • 2 tbsp. chopped parsley
  • two tbsp. of finely chopped sage
  • 2 tbsp. unsalted butter

For topping

  • 2 garlic cloves, smashed
  • Salt
  • 2 tablespoons of olive oil
  • 1 cup fresh bread crumbs
  •  grated zest of 1 lemon
  • 1 tbsp. chopped parsley
  • 1/4 teaspoon cayenne

How to Make

  1. Put the oven to 350 degree then put the mustard, chile powder, 1/2 teaspoon of oil, half of the gar, 1 tablespoon of the sage and half teaspoon of salt and also pepper. Put the chicken breast in this mixture.
  2. Bake it for one and half hour, then let it for 10 minutes after that.

  • 1 lemon, cut into thin slices, divided
  • 2 bunches Broccolini (about 1 lb.)
  • 4 small bone-in, skin-on chicken breasts (about 2 1/2 lbs. total)
  • 1 red onion, cut into 1/2″ wedges
  • 1/2 teaspoon crushed red pepper, plus more for serving

How to Make

  1. Preheat the oven to 425 degree F.
  2. Combine garlic, parsley, mustard, 1 tbsp. oil in a bowl and rosemary. Flavor with black pepper and salt. put rosemary mixture and slices of lemon underneath skin of chicken. Use the remaining rosemary mixture over the chicken skin then bake it for 22 minutes.
  3. Place onion, toss broccolini, remaining lemon slices, red pepper and 2 tablespoons oil in the bowel. flavor with black pepper and salt. Place vegetables around the chicken. Bake it until reaches 165 degree F, for 14 minutes then serve it.
